CHINESE SWEET CORN SOUP
I use this recipe frequently and the children love it.
1 can 14 oz. cream style corn
2 eggs well beaten
5 cups water ( I add chicken soup mix)
2 Tbsp. corn starch plus 1/4 cup water
1 stalk green onion chopped
Seasonings:
2 tsp. salt
1 tsp. MSG. (optional)
1/8 tsp. white pepper
1) Bring water to full boil.
Pour in the cream style corn.
2) Stir in corn starch and water mixture and boil at lower heat
3) Trickle the beaten egg into soup stirring constantly.
4) Turn off heat and garnish with chopped green onion or chopped ham.
6 servings.
GRILLED MAPLE SALMON STEAKS
Whenever we have visitors from Japan, they always bring us gifts and I’m always in a quandary what to send back with them. I heard they like our Maple syrup since they use it for a lot of their cooking and they were happy, although it was quite heavy.
I am trying to replace a lot of my sugar with maple syrup in cookies, smoothies, etc. and still experimenting with good results so far. This salmon is so delicious!
Marinade:
3 Tablespoons (45 ml) maple syrup
1 1/2 Tbsp. 22 ml soy sauce
1 1/2 Tbsp. (22 ml) sesame oil
2 large garlic cloves, minced
1 Tbsp. (15 ml) grated fresh ginger
1/8 (0.5) hot chilli paste
In small bowl, whisk together maple syrup, soy sauce, sesame oil, garlic,
ginger and hot chilli paste.
Reserve 2 Tbsp. (30 ml) of the marinade for brushing and set aside.
Salmon:
4 (1 inch) salmon steaks, about 6 ounces each
2 green onions
1) Place salmon steaks in shallow glass baking dish large enough to hold steaks
in single layer. Pour remaining marinade over steaks and turn to coat evenly;
Let stand for 10 minutes, turning over several times.
2) Place steaks on greased barbecue grill over medium high heat.
Brush with some of the reserved marinade. Cook 10 minutes, or until fish flakes easily when tested with a fork, turning once and brushing with marinade.
3) Meanwhile, diagonally slice green onions into 1 inch pieces.
Transfer grilled salmon to platter. Sprinkle with salt and pepper to taste.Sprinkle with green onions.
Makes 4 servings.
KOREAN BEEF (Kalbi)
This is a favourite delicious beef to serve for the family or company. It is so quick on the barbecue or in the oven.
4 to 5 lbs. short ribs, sliced 1/4 inch thick.
5 to 6 cloves garlic, minced
1/4 cup sesame oil
1 c. soy sauce
1/2 cup brown sugar
1/2 to 1 inch ginger, grated
1 1/2 tsp. ground sesame seed
3/4 cup chopped green onions
1 1/2 tsp, ground black pepper
Mix above ingredients together.
Marinate meat overnite.
Barbecue for 3 minutes each side-do not overcook
Or broil the meat on foil lined cookie sheet for 5 to 7 minutes on top rack for medium rare. Or bake at 375 degree for 5 minutes for medium to well done.
