Cocoa Bran Banana Muffins

When I saw this Chocolate Banana Bran Muffin recipe, I had to try it out and take it to a relative I was visiting who has a constipation problem. It is so moist and delicious but you must leave it in the fridge and nuke it in the microwave or just defrost. If left out, it mildews fast.


 

COCOA BRAN BANANA MUFFINS 

The natural wheat in bran fiber in all bran is the best fiber for keeping things moving in natural rhythm. 

1 1/4 cup all bran cereal3/4 cup milk (1%)

1 cup all purpose flour

1 1/2 cup lightly packed brown sugar

1/4 cup cocoa1 tbsp baking powder

1 tsp baking soda and salt1 egg

1/4 cup canola oil

3 large ripe bananas  reserve 12 thin slices for top and mash the rest 

1/3 cup semisweet chocolate chips

 

1. Combine cereal and milk in a medium bowl and soften 2 minutes

2. In a large bowl combine flour, sugar, cocoa, baking powder, baking soda and salt

3. Beat eggs, oil and mashed banana into cereal mixture

4. Stir in dry ingredients until just combined

5. Fold in chocolate chips

6. Spoon evenly into 12 slightly oiled muffin pans

  7. Top with reserve Banana

8. Bake in preheated oven 20 minutes for 400 degrees


ROCK COOKIES

My daughter brought me these cookies from her mother in laws recipe (from Ivy) and the title of the cookie didn’t appeal to me but her husband loves them. They are hard but the taste is good  – not too sweet. 

 

1 2/3 cup flour

1/2 cup butter

A pinch of salt

1 egg

1/2 cup milk

2/3 cup currants (optional cranberries) 

 

Mix together all ingredients and separate into 12 muffin tins. Bake at 450 degrees for 20 minutes. 


JACK DANIELS BBQ SAUCE

5 to 6 lb Pork Back Ribs

1 cup Catsup

1 cup sugar

3/4 cup soya sauce

1/3 cup oyster sauce

1 oz whiskey

 

Boil Spare ribs for 1 – 1 and 1/2 hours.

Mix together ingredients

Marinade overnight (You can use a ziplock bag and keep turning it over in the fridge)

Cut ribs 2 or 3 rib size

BBQ or broil it in the over 375 degrees for 1 to 1 and 1/2 hours.
