How wonderful! Congratulations on your 50th Anniversary of the Bulletin! I remember the only Japanese Canadian newspaper was The New Canadian from Montreal post war while growing up in Ashcroft. My parents talked about who passed away and news of the people who use to live on the west coast. We should be truly grateful that Mickey Tanaka took the initiative to start the first JCCA Bulletin. It’s great to read about the Japanese Canadians and what they are doing and keep our cultures alive.

Last month we attended a Seicho-No-Ie three day Seminar in Oahu, Hawaii and at one of the meals they served this delicious purple yam dessert. I requested the recipe to bring back to you. The yam tasted just like anko.
PURPLE YAM DESSERT
Okinawan Sweet Potato Pie with Haupia Topping (coconut milk)
Crust:
3/4 cup margarine
4 Tbsp. sugar
1 1/2 cup flour
1/2 cup nuts – chopped
Cut butter into flour and sugar until crumbly.
Add chopped nuts.
Press lightly into 9 x 13 pan.
Bake 325 degree oven for 20 – 25 minutes
Filling:
8 Tbsp. margarine softened
1 cup sugar
2 eggs beaten
2 cups purple yam cooked and mashed.
1/2 cup evaporated milk
1 tsp. vanilla
1/4 tsp.salt
Beat sugar and butter in a mixer.
Add the eggs and purple sweet potato
Add the milk, vanilla and salt.
Pour into crust and bake 350 degree
30-35 minutes and cool.
Topping:
2 cans frozen coconut milk (3cups)
1/2 cup sugar
1/2 cup cornstarch in 1 1/2 cup water
Bring to boil in a saucepan and stir until thickened.
Pour over cooled filling and refrigerate.
*I must confess that my topping didn’t firm up the way theirs did so I doctored mine up with two bags of gelatin. If one is counting cholesterol (coconut milk may not be desirable) I would use the light whipped topping 2 cups size.
BODY BUILDER COOKIES
3/4 cup butter
1 cup brown sugar
1 egg
1 tsp. vanilla
1 3/4 cup flour
1/2 tsp. each baking powder, baking soda and salt
3 cups bran flakes
1/2 cup shredded cheddar cheese
1/2 cup raisins
1/2 cup pecans
Mix all together in the order given.
Drop by tablespoon -balls on parchment paper and bake 350 degree for 15 min.
*Can’t taste the cheese but two cookies a day keeps me regulated. Makes 4 dozen.
*Got the runs? Stomach flu? Try grated cheddar cheese and grated apple together and it works!
